- Salt and pepper
- Olive oil
Instructions
- Heat a little olive oil in a large pan or pot over medium heat. Add the diced onion and chopped garlic, then cook until softened.
- Add the beef mince and cook until browned, breaking it up with a spoon as it cooks. Season with salt and pepper.
- Stir through the chicken stock powder, cumin, and chilli flakes or cayenne pepper if using.
- Add the diced red capsicum and cook for another few minutes, until it starts to soften.
- Add the kidney beans, canned tomatoes, and brown sugar. Stir well to combine.
- Reduce the heat and simmer for around 30 minutes, stirring occasionally. You can cook it for less time if needed, but a longer simmer helps the flavours come together.
- Serve with white or brown rice and garnish with coriander or parsley.
