What is Nargesi?

Nargesi is often described as Persia’s answer to scrambled eggs or an omelette. It turns a handful of everyday ingredients into a comforting, flavour packed meal.

Spinach is cooked with onion, garlic, and turmeric to create a fragrant base. Eggs are then cracked directly into the pan and gently cooked until just set, adding protein and richness.

Ingredients

  • 3 tbsp olive oil
  • 1 large onion, thinly sliced
  • 4 cloves garlic, minced
  • 6 cups baby spinach
  • 4 large eggs
  • ½ tsp ground turmeric
  • ½ tsp salt
  • ¼ tsp black pepper

Method

  • Heat olive oil in a large skillet over medium heat.
  • Add onion and cook until softened and lightly golden, about 8 minutes.
  • Stir in garlic and cook for 1 minute until fragrant.
  • Add spinach and cook until wilted, stirring occasionally.
  • Season with turmeric, salt, and pepper. Stir to combine.
  • Create four small wells in the spinach mixture and crack an egg into each.
  • Cover and cook until the eggs are set to your liking, about 5 to 8 minutes.
  • Serve with warm flatbread, pita, or crusty bread.

Tips

  • Using mature spinach? Roughly chop the leaves before cooking.
  • Add spinach in batches if it won’t fit in the pan all at once.
  • Finish with a drizzle of olive oil for extra richness.
  • Serve with feta, Greek yoghurt, or fresh herbs for a more substantial meal.
  • Add a pinch of chilli flakes if you like a little heat.
