Ingredient
- 1 bag low-sodium nacho or tortilla chips
- 3 cups frozen corn, or canned sweet corn, drained
- 2 tablespoons mayonnaise
- 2 cups grated cheese
- 1 tomato, diced
- 1 cucumber, diced
- 2 cups lettuce, chopped
- ¼ cup sour cream
- 1 lime
- Chilli powder, to taste
- Chopped coriander (optional)

Method
- Heat a large non-stick frying pan over high heat. Cook the corn, stirring occasionally, until heated through and lightly charred. If using canned corn, drain it well before cooking.
- Transfer the cooked corn to a bowl and stir through the mayonnaise.
- Spread the tortilla chips on a baking tray and sprinkle the grated cheese evenly over them. Bake at 180°C for 5 to 10 minutes, or until the cheese has melted.
- Arrange the cheesy chips on a large serving platter. Top with the corn mixture, diced tomato, diced cucumber, chopped lettuce, sour cream, chilli powder, and coriander, if using.
- Finish with a squeeze of fresh lime and serve immediately.
