A bright, flavour-packed dinner for winter evenings

Cold evenings call for dinners that feel both warming and fresh. This Greek-style tray bake brings together lemon, garlic, oregano, tender chicken and colourful vegetables in one pan.

Why you’ll love this recipe

It is bright, comforting and easy to prepare. Lemon, garlic and oregano add plenty of flavour, while the oven does most of the work.

Serves: 4
Preparation: 15 minutes
Cooking: 45 to 50 minutes

Ingredients

  • 600 g boneless, skinless chicken thighs
  • 500 g baby potatoes, halved
  • 1 red capsicum, cut into chunks
  • 1 zucchini, cut into thick half-moons
  • 1 red onion, cut into wedges
  • 2 tablespoons olive oil
  • 1 lemon, zested and juiced
  • 2 garlic cloves, crushed
  • 2 teaspoons dried oregano
  • Salt and black pepper, to taste
  • ½ cup pitted Kalamata olives (optional)
  • 75 g feta, crumbled (optional)
  • Lemon wedges and chopped parsley, to serve

Method

  1. Preheat the oven to 200°C fan-forced. Line a large roasting tray with baking paper.
  2. Add the potatoes to the tray. Toss with half the olive oil, half the garlic and half the oregano, then season with salt and pepper. Roast for 15 minutes.
  3. Coat the chicken with the remaining oil, garlic and oregano, plus the lemon zest and juice. Add the chicken, capsicum and red onion to the tray. Roast for 20 minutes.
  4. Add the zucchini and olives, if using. Turn the vegetables and roast for another 10 to 15 minutes, or until the vegetables are tender and the chicken reaches 75°C at its centre.
  5. Scatter over the feta and parsley, then serve with lemon wedges.

Tips and easy swaps

  • Leave out the olives or feta if they are not to your taste.
  • Cut the potatoes small enough to cook through and keep the zucchini pieces thick so they hold their shape.
  • Cool and refrigerate any leftovers promptly for an easy next-day lunch.
