Method

1. Cook the mushrooms

Heat the olive oil and 1 tbsp butter in a large pot over medium-high heat. Add the mushrooms and cook for 5–10 minutes, stirring occasionally, until they release their moisture and become golden brown.

2. Add aromatics 

Add the remaining butter and onion. Cook for 5 minutes until softened. Stir in the garlic and thyme for 30 seconds.

3. Create the base

Sprinkle the flour over the mixture and stir for 1 minute to cook out the raw flour taste, and gradually pour in the stock while stirring. Bring to a simmer and cook for 10–15 minutes.

4. Blend your soup

Fill the blender halfway with the soup and blend until smooth and thick. If you prefer more texture, leave it partially chunky. Repeat with the remaining soup.

5. Finish with cream

Stir in the cream. Heat gently for 2–3 minutes without boiling. Season with salt, pepper, and a squeeze of lemon juice if desired.
