A fresh, colourful dinner that keeps things simple.

When you want something fresh without spending too long in the kitchen, this couscous bowl is an easy option. Crispy halloumi, bright vegetables, herbs and lemon come together in a meal that feels light, satisfying and full of texture.

Why you’ll love this recipe

It comes together quickly, uses simple ingredients and is easy to adapt with whatever vegetables you already have. The combination of fluffy couscous, salty halloumi and a fresh lemon dressing also makes it a handy option for lunch or dinner.

Ingredients

Serves 2

  • 1 cup couscous
  • 1 cup boiling vegetable stock or water
  • 225 g halloumi, sliced
  • 1 small zucchini, sliced
  • 1 bunch asparagus, trimmed and cut into bite-sized pieces
  • 1 cup frozen peas
  • 1 cup cherry tomatoes, halved
  • 2 tbsp olive oil
  • Juice of 1 lemon
  • 1 small handful parsley or mint, roughly chopped
  • Black pepper, to taste

Method

  1. Place the couscous in a heatproof bowl. Pour over the boiling stock or water, cover and leave for 5 minutes. Fluff with a fork.
  2. Heat half the olive oil in a large frying pan over medium-high heat.
  3. Cook the zucchini and asparagus for 4 to 5 minutes, then add the peas for the final 1 to 2 minutes.
  4. Transfer the vegetables to a plate. Add the halloumi to the same pan and cook for 1 to 2 minutes on each side, or until golden and crisp.
  5. Combine the couscous, vegetables, cherry tomatoes and herbs. Add the remaining olive oil and lemon juice, then toss gently.
  6. Divide between bowls, top with the crispy halloumi and finish with black pepper and extra lemon if you like.

Tips and easy swaps

  1. Swap asparagus for broccolini, green beans or snow peas.
  2. Use quinoa or brown rice instead of couscous if you prefer.
  3. Add chickpeas for extra texture and a more substantial bowl.
  4. Keep the halloumi separate until serving if you are making it ahead, so it stays crisp.

Key takeaway

Simple meals can still feel fresh and satisfying. A quick grain base, a few colourful vegetables and a flavourful topping can be enough to make an easy meal you’ll want to come back to.
