Method
- Add the rice vinegar, soy sauce, sesame oil, honey and garlic to a clean container with a secure lid. Stir to combine.
- Add the cucumber, spring onion, sesame seeds and chilli, if using.
- Secure the lid and shake for 15 to 20 seconds, until the cucumber is evenly coated.
- Leave the salad to rest for five minutes, then serve. Refrigerate any leftovers promptly and enjoy within a day for the best crunch.
