For the baked oats
- 2 medium apples, cored and diced
- 2 cups rolled oats
- 1 teaspoon baking powder
- 1½ teaspoons ground cinnamon
- Pinch of salt
- 2 eggs
- 1½ cups milk of your choice
- 2 tablespoons maple syrup or honey
- 1 teaspoon vanilla extract
For the crumble topping
- ⅓ cup rolled oats
- ⅓ cup roughly chopped walnuts or pecans
- 1 tablespoon brown sugar, optional
- 1 tablespoon melted butter or neutral oil
Method
- Preheat the oven to 180°C, or 160°C fan-forced. Lightly grease a 20 cm square baking dish.
- Add the apples, oats, baking powder, cinnamon and salt to the dish and stir to combine.
- Whisk the eggs, milk, maple syrup and vanilla in a jug. Pour over the oat mixture, stir gently and spread everything into an even layer.
- Combine the topping ingredients in a small bowl, then scatter evenly over the oats.
- Bake for 30 to 35 minutes, until the centre is set and the topping is golden. Rest for 5 minutes before serving.
Tips and easy swaps
- Swap the apples for firm pears, or add a handful of frozen berries.
- For a nut-free version, replace the walnuts or pecans with pumpkin or sunflower seeds.
- Leave out the brown sugar for a less sweet topping.
- Cool leftovers within two hours, cover and refrigerate for up to three days. Reheat until steaming. Individual portions can also be frozen for up to two months and thawed overnight in the fridge.
