An easy homemade fix for your next pizza craving
Craving pizza but not keen on another takeaway? This quick Greek yoghurt dough uses two everyday ingredients and skips the yeast, proving time and complicated prep.
Pick one of the topping combinations below, or use pizza night as an excuse to clear out the fridge.
Why you’ll love this recipe
- The base uses just plain flour and Greek yoghurt.
- There is no yeast or proving time, so it comes together quickly.
- The toppings are completely flexible, making it an easy way to use ingredients you already have.
Makes: 1 medium pizza, serving around 2 people
Ingredients
- 1 1/2 cups plain flour, plus extra for dusting
- 3/4 cup plain Greek yoghurt
- Tomato paste or pizza sauce
- Optional for the dough: salt, pepper and garlic powder
- Your chosen toppings
Method
- Heat the oven to 220°C (200°C fan-forced) and line a baking tray with baking paper.
- Mix the flour and Greek yoghurt until a rough dough forms. Turn onto a lightly floured surface and knead briefly until smooth. If it feels sticky, add a little extra flour.
- Roll the dough into a thin pizza base and transfer it to the tray. For a crisper base, bake it for 5 to 7 minutes before adding the toppings.
- Spread with tomato paste or pizza sauce, add your toppings and return to the oven until the base is golden and the cheese has melted. Make sure any meat toppings are heated through before serving.
Three topping ideas
- Pesto margherita: Tomato base, mozzarella, sliced tomato and basil, finished with pesto.
- Loaded ham and veg: Tomato base, ham, zucchini, capsicum, olives, spinach, pineapple and cheese, finished with a drizzle of aioli. Pineapple is optional, but yes, we are putting it on the list.
- Peri-peri chicken: Tomato base, shredded rotisserie chicken, red capsicum, red onion and cheese, finished with peri-peri mayo. Prefer something sweeter? Swap the drizzle for barbecue sauce.
Tips and easy swaps
- Want a little more lift? Add baking powder to the plain flour before mixing. It is optional, so the base stops being strictly two ingredients, but it will be a little softer and puffier.
- Salt, pepper and garlic powder are easy additions if you want more flavour in the dough.
- Treat the toppings as a guide. Leftover roast vegetables, cooked chicken, deli meats, mushrooms, spinach and odds and ends of cheese can all earn a second life on pizza night.
Key takeaway
You do not need a long ingredient list to fix a pizza craving at home. Start with plain flour and Greek yoghurt, then make the toppings as simple, loaded or leftover-friendly as you like.
