Ingredients
- 1 cup rolled oats
- 1/2 cup pitted dates
- 1 tbsp desiccated coconut
- 200 g cream cheese, softened
- 1/2 cup Greek yoghurt
- 1 to 2 tbsp honey or maple syrup, to taste
- 1 tsp vanilla extract
- 1 cup strawberries, finely chopped
- Extra strawberries, to serve
Method
- Add the oats, dates and coconut to a food processor. Blend until the mixture becomes sticky and holds together when pressed.
- Press the mixture into the base of a mini muffin tray lined with small paper cases.
- In a bowl, mix the cream cheese, Greek yoghurt, honey or maple syrup and vanilla until smooth.
- Fold through the chopped strawberries, then spoon the mixture over each base.
- Chill for at least 2 hours, or until firm. Top with fresh strawberry slices just before serving.
Keep refrigerated and enjoy within 2 days. If serving outdoors or taking them to work, keep them chilled until ready to eat.
