San choy bow is fresh, satisfying and full of texture. Crisp iceberg lettuce keeps it light, while lean pork mince, mushrooms, carrot, baby corn and water chestnuts add flavour, fibre and crunch so it still feels filling.

Ingredients

Serves 4

Sauce

  • 2 tsp cornflour mixed with 4tbsp of water
  • 2 tbsp of soy sauce
  • 2 tbsp oyster sauce
  • 1 tbsp sesame oil
  • 2 tbsp Chinese cooking wine or mirin
  • 1 tsp white sugar

Filling

  • 2 cloves garlic, minced
  • 1 tsp ginger, minced
  • 400g lean pork mince
  • 1 onion, finely chopped
  • 1 carrot, grated
  • 1 can water chestnuts, drained and finely chopped
  • 6 baby corn, finely chopped
  • 200g mushrooms (we recommend shiitake), finely chopped
  • 1 head of Iceberg lettuce, leaves separated

Method

  1. In a small bowl, add the sauce ingredients and stir to combine.
  2. Heat a large pan or wok over medium-high heat. Add the pork mince and cook for 4–5 minutes, breaking it up as it browns.
  3. Add the garlic, ginger, and onion. Cook for 2 minutes until softened.
  4. Stir through the carrot, mushrooms, baby corn, and water chestnuts. Cook for another 4–5 minutes until the mushrooms soften and most of the moisture cooks off.
  5. Pour in the sauce and stir well. Cook for 1–2 minutes until glossy and thickened.
  6. Spoon the filling into iceberg lettuce cups and top with fried onions and scallions.
